The Ultimate Autumn Morning Recipe; Pumpkin French Toast

We are all about slow mornings here at Fable and Eve. For those who don’t know, slow mornings are about spending the first hour or so of your day device-free, to help you achieve a sense of re-focus ahead of the day. Some spend this time meditating or exercising, but one of our favourite ways to enjoy a slow morning is through breakfast – and even better, breakfast in bed. A warming breakfast on a chilly morning is the perfect way to start your day, especially when you get to enjoy it in your pyjamas. 

To encourage the Fable and Eve family to adopt slow mornings, we have combined a breakfast favourite with an Autumn staple to make the most idyllic recipe – Pumpkin French Toast.

What you need:

100g of pure canned pumpkin puree

4 large eggs, whisked

Splash of milk 

1 teaspoon of vanilla extract

2 tablespoons of sugar

1 teaspoon of ground cinnamon

¼ teaspoon of nutmeg

12 slices thick-cut bread or brioche 

Maple syrup 

Butter, to grease the pan

What to do:

  • Add your ingredients (except the bread) to a shallow dish and whisk 
  • Meanwhile, lightly butter a frying pan and turn it on low-medium heat
  • Dunk a piece of bread in the ingredient mixture on both sides, leaving it to soak for a few seconds each time
  • Lay the bread onto the pan and grill on each side until golden 
  • Remove and repeat with the rest of the bread 
  • Serve warm with a drizzle of maple syrup and your favourite book or podcast
